Overview
Dimitri's Coffee is Jordan's first specialty coffee roaster, founded in Amman in 2014 by three brothers — Waleed, Salah Aldin, and Hisham Abubaker — after Hisham spent fifteen-plus countries' worth of trips across Europe, Africa, and East Asia studying café culture. Dimitri's roasts on a custom machine designed by one of the brothers and built by local Jordanian engineers, and now operates four locations across Amman including a flagship on The Boulevard inside the $5-billion Abdali development.

Why it matters
Jordan's coffee tradition is built around dallah-style Arabic coffee and shisha-bar Turkish coffee — when Starbucks arrived in 2005, espresso and Western brewing were still alien to most consumers. Dimitri's was the first Jordanian operation to build a specialty roastery rather than import roasted beans, and Hisham (now a frequent industry commentator) argues the country still has only around four specialty roasters operating at his quality bar.
