Paradise Coffee was founded in 2006 by Fritz Sajovitz, who opened his own roastery on Grand Cayman in 2012 after six years of importing and selling. The roastery now runs a 26-pound Diedrich, producing roughly 500 pounds a day and 18,000 to 20,000 pounds a year of locally-roasted, locally-blended coffee — making it the dominant on-island producer of Caymanian-branded specialty coffee.
Cayman's hospitality scene is dominated by US-import coffee. Paradise is the rare local roastery treating the Cayman market like a real coffee culture — small enough to know its supermarket buyers by name, large enough to roast 20,000 lbs a year, and consistent enough to anchor most of the island's serious coffee retail.
