Overview
Speicherstadt Kaffeerösterei was founded in 2006 by Thimo Drews and Andreas Wessel-Ellermann, two second-generation Hamburg coffee men whose fathers had once shared an office at the city's largest green importer. After multi-year negotiations with monument and environmental authorities, they took over an 1888 warehouse floor at Kehrwieder 5 in the UNESCO-listed Speicherstadt district, where the same Probat drum still roasts daily in full view of café guests for a 50-person team drawn from twenty nationalities.

Why it matters
Hamburg has been Europe's main green coffee port for over two hundred years, and the Speicherstadt warehouse district was built in the 1880s specifically to hold the trade's beans — but until the mid-2000s the city's third-wave roasting culture was barely visible. Speicherstadt Kaffeerösterei put a modern specialty operation back into the original warehouses themselves, anchoring Hamburg's specialty scene at the literal source of European coffee.
