Idealist Coffee was founded in 2018 in Kyiv by Volodymyr Yefremov and has grown into a full-cycle specialty operation with around ten cafés across the capital, its own roastery, and a drip-bag distribution model that places freshly roasted Ukrainian-roasted specialty coffee on board Ukrzaliznytsia trains, in partner hotels, at petrol stations, and in retailers nationwide. The Idealist roastery has been struck twice by Russian missile attacks — first early in the full-scale invasion that began 24 February 2022, and again on 25 October 2025, when ballistic strikes on Kyiv caused over $100 million in business damage and badly hit Idealist's production facility. The team has continued to operate, distributing coffee to soldiers, volunteers, and the local community.
Idealist is the most prominent face of Ukraine's specialty coffee industry and a symbol of the sector's resilience under Russian assault: despite repeated strikes on its production, it has kept ten Kyiv cafés open, expanded into Estonia, and turned drip-bag distribution into a cultural artifact onboard Ukrzaliznytsia trains. World Coffee Portal data shows Ukraine's branded coffee shop market has continued to grow even during the war, and Idealist's continued operation has come to embody what the country's coffee professionals call 'the memory of better times' that a stable cup represents.
