Overview

Su Roastery was opened in central Skopje in winter 2024 as the latest concept of family-owned Su Holding, reviving a coffee-roasting tradition that the founding family traces back to the 1930s, when an ancestor began roasting coffee and chickpeas at home to support his family. The roastery on Jordan Mijalkov street is built around a public roasting floor where customers watch beans roast on the same premises where they're served, and Su's coffee is served exclusively across the family's other Skopje and Ohrid hospitality venues.

Why it matters

North Macedonia's coffee culture is heavily Italian and Turkish in style, and almost no operations in the country roast their own beans for Skopje's specialty cafes — most pour Greek, Bulgarian, Italian or German beans imported through specialty distributors. Su Roastery is the rare Macedonian operation that closes the loop, roasting in central Skopje for its own family of cafes, and the family's narrative rooting it in a Depression-era coffee-and-chickpea trade gives the country something it has lacked: a domestic specialty heritage story.
