Overview
Spyhouse opened its first cafe on Nicollet Avenue in Minneapolis's Whittier neighborhood in 2000, founded by Christian Johnson with the explicit intent — informed by the cafe traditions of 1500s Constantinople — to be a non-tribal third place at a moment when every Minneapolis coffee shop was specialized by subculture. Originally a multi-roaster cafe sourcing Verve, Ritual, Coava, and Tea Source, Spyhouse later launched its own roastery in Northeast Minneapolis and was acquired by Kansas City–based FairWave Coffee Collective in July 2021 — making it sister-brand to The Roasterie and Messenger Coffee.
